I maintain that it’s nigh impossible to make inedible pizza, having even bought and eaten more than one of those little microwavable ones from the freezer section in Morrisons. It is also tricky to get pizza so right that it’s worth raving about. Fundi are nailing it. There isn’t a thing I’d change about the pizzas they’re serving up. The base is crisp and light but holds its own below a rich tomato sauce, creamy mozzarella, punchy pepperoni and a drizzle of chilli oil for extra punch. Their devotion to good pizza is also to be applauded, given that they lug around a bespoke wood-fired oven to cook them in. Though the fact their name is spelt out on the top of it in mirror mosaic tiles must make being fond of it a bit easier.
